Food carries the energy with which it is made.
That belief led us back to traditional methods to slow processes that respect the ingredient, not overpower it. To sourcing spices from farmers who understand the land. To preparation techniques that preserve natural oils, aroma, and character instead of stripping them away.
Some of our spices are pound-crushed using the traditional Ukhal-Musal. Others are naturally sun-dried or minimally processed. Each method chosen carefully, not uniformly. We don’t believe one process fits all. We believe the ingredient should decide the method.
Like Shabri, we choose intention over convenience.
